WHO WE ARE
The Agugiaro & Figna Mills R&D Centre was established in 1999 in the Curtarolo headquarters, near Padua. In 2004 the new Research Centre began work in the Magione factory, near Perugia.
The R&D Centre currently has 6 full-time technicians, all with varied and extensive experience and it cooperates with the 3 flour analysis laboratories of the Agugiaro & Figna Group.


OBJECTIVES
Our R&D Centres focus on studying the processes and technological problems involved with:

  • Bread production
  • Pizza production
  • Production of confectionery with and without yeast

 

Our mission is to “increase technological know-how about production systems for bakery products, develop flours that are most suitable for current processes and to transfer the necessary knowledge to our customers to best govern their productions”.

 

We are constantly at our customers’ disposition for:

  • Telephone advice (ideas and advice for solving their problems)
  • Interventions on-site for production demonstrations and to study their problems.
  • Production demonstrations in our sites in Curtarolo (PD) and Magione (PG)
  • New product development or improvement to current products.

 

NATURAL YEAST
The R&D Centre has perfected an industrial process to produce Natural dried ‘mother’ yeast. With the professional skill of our technicians and cutting edge technology, we have managed to select and maintain the ‘mother’ yeast, avoiding the primitive fermentation that developed in ‘mother’ yeasts that were managed by hand.
From this original yeast stock a mass is obtained that has grown in weight and is then dried using a very sophisticated process.
The entire process is constantly monitored according to HACCP methods.
The powder mother yeast that is obtained undergoes numerous controls before it is authorised for sale.

 

COLLABORATION
We have various partners in the different research fields:

  • Department of Genetics, Microorganism Biology, Anthropology and Evolution at Parma University
  • Faculty of Veterinary Medicine at Padua University.
